Pecan Pumpkin Butter Dessert Squares

These are literally Thanksgiving in your mouth.  Amazing and delicious, a must have for Autumn.

1 package yellow cake mix; set aside one cup

1/2 cup butter, melted

3 eggs, large

1 jar of Muirhead Pecan Pumpkin Butter (available at Williams-Sonoma)

2 tablespoons milk

2 tablespoon flour

1/4 cup sugar

1/4 cup butter, softened

1 teaspoon cinnamon

Preheat oven to 350 degrees.  Divide yellow cake mix, placing all but one cup in a mixing bowl.  Stir the melted butter and one egg into the cake mix.  Press the mixture into the bottom of a greased 9″ x 13″ pan.  Mix the jar of Muirhead Pecan Pumpkin Butter with two eggs and milk.  Pour over the cake mix.  Stir the reserved cup of cake mix with the flour, sugar, softened butter, and cinnamon.  Mix together until crumbly.  Sprinkle over top of the pumpkin layer.  Bake for 35-40 minutes or until golden brown.  Cool, and cut into 2″ squares.  Serves 24.


York Peppermint Patty Brownies

Found this recipe on the back of the bag of York miniature Peppermint Patties.  So yummy and perfect for this time of year!

24 small York Peppermint Patties

1-1 1/2 cups (3 sticks) of butter, melted

3 cups sugar

1 tablespoon vanilla extract

5 eggs

2 cups flour

1 cup Hershey’s cocoa

1 teaspoon baking powder

1 teaspoon salt

Heat oven to 350 degrees.  Remove Peppermint Patty wrappers.  Grease a 13″” x 9″ x 2″ baking pan.  Stir together butter, sugar, and vanilla.  Add eggs; beat until well blended.  Stir in flour, cocoa, baking powder, and salt.  Blend well.  Reserve 2 cups batter.  Spread remaining batter in prepared pan.  Arrange Peppermint Patties about 1/2″ apart in a single layer over the batter.  Spread reserved 2 cups of batter over Patties.  Bake for 50-55 minutes.  Makes about 36 brownies!

Well, I’ve decided to embark on the treacherous journey to the kitchen and as a homemaker…

As a senior at JMU down in Virginia, I’m hours away from home and my Mama’s cooking and baking. Having to fend for myself, I’ve been learning a lot about the art of cooking this semester.

Armed with my Mom and Grandma’s recipes, as well as any I find along the way, I have begun my journey!

So, strap on your apron and away we go…
